Our oysters are the perfect combination of French savoir-faire and the uniqueness of the Sacca degli Scardovari, a Unesco heritage site and biosphere reserve. The lagoon offers maximum nutrients to shellfish like the oyster. The oysters are glued one by one by hand onto ropes, which are connected to a winch which raises them, effectively reproducing the effect of the Atlantic tides on the oysters. The frequency of the elevations, established thanks to timers on solar photovoltaic and wind panels, allows the growth of the product to be managed. In fact, the higher the frequency, the longer the growth period will be.
