A unique place to raise excellent oysters
The method used is "suspended": the oysters are attached vertically to ropes which allow for precise dosing of water and air, alternating periods of immersion with periods of exposure to the air and the sun, simulating the alternation of the tides. The less salty water of the lagoon gives the oysters a particular, delicate and aromatic flavour.
This is where we grow our oysters, in constant balance between fresh and salt water. And every day, respect for our environment and commitment to sustainable development are the values that guide us.
