It all started in 2010 thanks to a meeting with Florent Tarbouriech, the inventor of the system which, in the Thau lagoon, enables the production of the French queen of shellfish that enchants the palate. Alessio Greguoldo with real foresight and thanks to a positive "madness" was the only one to understand the validity of the idea of proposing the French model again in the lagoon a stone's throw from Venice.
